Quick Southwestern Chili
Great recipe for those cold nights!
Ingredients:
- 1 lb. lean ground beef combined with 1 lb. ground turkey breast
- 1 onion, chopped
- 1 cloves fresh garlic, chopped
- 3 – 14 1/2 ounce cans low-sodium diced tomatoes
- 1 – 4 or 5 ounce can mild green chilies
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cans black beans, drained and rinsed
- 1 cup water
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
In a medium or large stock pot, brown the ground turkey and ground beef with onions and garlic over medium-high heat. Add remaining ingredients and stir. Bring mixture to just before boiling, cover and reduce heat to medium-low for 20 minutes. Serve with shredded cheddar cheese, Greek style yogurt, and/or fresh cilantro if desired. (Serves 8)
